Pork Tenderloin and Grilled Veggies

One of the family favorites I cook every great while. Its really easy, and very easy on the tummy”

Ingredients you will need:

1 Pork Tenderloin, Dry Rub (recipe below), Asparagus, mushrooms, yellow and green summer squash, Olive Oil.

Dry Rub Recipe:

1/4 sugar 1/4 cup brown sugar, dash of cinnamon, 1/8tsp garlic powder, salt and pepper,dash of EVOO

Preparation: 

Give that meat a massage! Rub the dry rub all over, covering all sides. Wrap in saran wrap and let sit overnight, so it becomes juicy and tender. Good Morning! Time to unwrap the meat! Place in a shallow baking dish, and bake at 425, for 30 minutes.Start chopping your veggies. Now with the asparagus, I sometimes use the whole thing, but my boys like the tips, so its up to you!  Sautee your veggies in EVOO for about 10 minutes on low heat. Drain veggies on a paper towel. Take out the tenderloin and slice into medallions. SUPER YUMMY!
